Sourdough Breakfast Strata

This hearty sourdough breakfast strata is simple, filling, and perfect for an easy make-ahead breakfast. It combines eggs, milk, savory-sweet maple sausage, and cubes of sourdough that get lightly toasted in butter before everything bakes together.

The result is somewhere between a breakfast casserole and a savory bread pudding: crisp and golden around the edges, soft and custardy in the middle, and packed with protein.

🛒 Ingredients

  • 10 large eggs

  • 3 cups raw milk

  • half a loaf of sourdough, cubed

  • 1lb maple breakfast sausage

  • 2 tablespoons butter

  • Salt, to taste

  • Fresh avocado, for serving

🔪 Instructions

  1. Preheat the oven to 400°F.

  2. Remove the breakfast sausage from its casing, if necessary, and break it into small bite-sized pieces. Add it to a large oven-safe skillet and sauté over medium heat until browned and cooked through.

  3. Reduce the heat to medium low and add 2 tablespoons of butter to the skillet. Once melted, add the cubed sourdough and gently toss it with the sausage and butter. Let the bread cook for a few minutes, stirring occasionally, until it begins to absorb the butter and gets lightly toasted around the edges.

  4. In a large bowl, whisk together the eggs and milk until well combined. Season with a little salt.

  5. Pour the egg mixture evenly over the sausage and sourdough in the skillet. Gently press down any bread pieces sticking up so they can soak up some of the egg mixture.

  6. Cover the skillet with an oven-safe lid or foil and transfer it to the oven. Bake for about 45 minutes.

  7. Remove the lid and continue baking for another 10 minutes, or until the center is set and the top and edges are lightly golden.

  8. Let the strata rest for about 5–10 minutes before serving. We especially love it warm with fresh sliced avocado on top.
